Make premium jerky at home with the Bearded Butcher Hickory BBQ Jerky Seasoning Kit. Designed to season and cure up to 10 pounds (4.5 kg) of your favorite meat — including beef, venison, or other meats — this kit delivers bold hickory BBQ flavor while using natural curing agents. Pre-blended with Cultured Celery Powder and Cherry Powder, it provides a non-synthetic curing process that ensures authentic flavor, safety, and a clean-label product.

For ground meat, distribute the entire packet over meat trimmings before grinding, mix thoroughly, and extrude into jerky strips. For whole muscle strips, cut into ¼" thick strips, coat evenly with seasoning, and marinate overnight. Cook or smoke meat strips to an internal temperature of 165ºF–170ºF, or until your preferred dryness is reached. Refrigerate or freeze for extended storage. CAUTION: Do not combine with synthetic cure (sodium nitrite).

Natural curing occurs as nitrates in celery juice powder convert into nitrites via naturally occurring bacteria, maintaining the meat’s pink color and inhibiting harmful bacteria. Cherry powder provides natural ascorbic acid, accelerating the curing process, while sea salt works in synergy with these powders to complete a natural curing system. This ensures a safe, flavorful, and naturally cured jerky experience. Note: This kit does not produce a shelf-stable product without additional USDA FSIS processing steps.
