Product Description

Prepare professional-quality homemade jerky with the Bearded Butcher Hot Jerky Seasoning & Natural Cure Kit. Designed to season and cure up to 10 pounds (4.5 kg) of your chosen meat — including beef, venison, or others — this kit combines bold, spicy flavors with natural curing agents like Cultured Celery Powder and Cherry Powder. It ensures authentic, safe, and flavorful jerky right from your kitchen.

For ground meat, distribute the entire packet over meat trimmings before grinding, mix thoroughly, and extrude into jerky strips. For whole muscle strips, cut into ¼" thick strips, coat evenly with seasoning, and marinate overnight. Cook or smoke strips to an internal temperature of 165ºF–170ºF, or until desired dryness is achieved. Refrigerate or freeze for extended storage. CAUTION: Do not combine with synthetic cure (sodium nitrite). This kit contains enough seasoning and natural cure for 10 lbs of meat.

Natural curing occurs as nitrates in celery juice powder convert to nitrites via naturally occurring bacteria, maintaining pink color and inhibiting harmful bacteria like Clostridium botulinum. Cherry powder provides natural ascorbic acid to accelerate curing, while sea salt works in synergy to complete a natural curing system. This ensures safe, flavorful, and naturally cured jerky. Note: This kit does not produce a shelf-stable product without additional USDA FSIS processing steps.
